Caprese Pizza


After viewing the latest cover of Everyday Food magazine I wanted to make a caprese pizza for dinner. We had all the ingredients at our house except for the pizza dough. That was easily rectified by a quick trip to Dom's. Thanks, Neal!

Pre-bake the pizza dough for 5 minutes or so, and then layer the tomatoes (from the Farmers' Market!), mozarella & basil. Salt & pepper and a little bit of olive oil drizzled on top and the pizza is done. So easy, so delicious and seasonal!

It turns out the cover of Everyday Food was depicting a tomato, basil and goat cheese frittata. Umm, no thanks. But my creation was quite scrumptious, so I'm fine with my misconception.
